This is a beautiful way to savour the flavours of autumn and into winter with a quick glazed apple scented with thyme and tart lime. It’s great over a decadent mac and cheese, over grilled chicken or fish or as a topping for crostini.
Primetime Lime Thyme Apples

- 2 apples, cored, cut into 2cm/1" chunks
- 1 tsp cold pressed oil
- 1 tsp butter
- Zest and juice of 1 lime
- 2 Tbsp fresh thyme (or 1 Tbsp dried)
- 1 Tbsp brown sugar
- ¼ cup water
- In a medium saucepan over medium high heat, add the oil and butter. When the butter has melted and starts to sizzle, add the apples. Leave to brown on one side for 2-3 minutes. Toss and add the lime juice/zest, thyme, sugar and water. Stir to combine and simmer for a further 3-5 minutes until a syrupy glaze has formed and coated the apples. Serves 2-3 as a side.
