Classic Cinnamon Pear Cobbler

Ingredients
For the pears:
  • 3 large pears, cored and chopped into 2cm/1" chunks
  • ¼ cup white sugar
  • 1 Tbsp flour
  • 1 tsp cinnamon
For the Cinnamon Cobbler Topping:
  • 2 cups red fife flour (or whole wheat flour)
  • 2 Tbsp white sugar
  • 1 Tbsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ cup frozen butter, coarsely grated
  • 1 cup + 2 Tbsp buttermilk
Instructions
For the pears:
  1. In a medium bowl, combine the pears, sugar, flour and cinnamon until all of the ingredients are well incorporated. Place into a loaf pan and set aside.
For the Cinnamon Cobbler Topping:
  1. In a medium bowl, combine the flour, baking powder, sugar, salt and cinnamon. Add the grated frozen butter and toss with your fingers quickly to incorporate into the dry ingredients. Add the buttermilk and stir with a wooden spoon until a thick batter-like dough is achieved.
To assemble:
  1. Using an ice cream scoop, scoop the cobbler topping on the prepared pear mixture in the loaf pan. Spread out the topping until it completely covers the pears. Bake in a 220C/425F oven for 18-20 minutes or until the cobbler topping is cooked through and no longer wet in the middle. Take out of the oven and allow to rest for 10 minutes before serving. Serves 4-6 with a scoop of vanilla ice cream.
