Mugicha (Japanese-style Roasted Barley Tea)

Ingredients
For the Roasted Barley:
  • 1 cup whole barley
To serve:
  • 8 cups boiling water
  • Roasted Barley
Instructions
For the Roasted Barley:
  1. Place a wok over medium heat. Add the barley and roast with occasional stirring and shaking of the wok over the course of 7-10 minutes. After 7 minutes, the grain will be lightly golden (think blond roast coffee) while after 10 minutes the grain will be deeply golden brown. Set aside.
To serve:
  1. Steep the Roasted Barley in the boiling water for 5-6 minutes. Strain through a tea strainer into mugs. Serves 6-8 depending on the size of the cups. It can also be served iced in the summer (which is most traditional in Japan). Sweeten to taste, but it has a great flavour on its own. The roasting process brings out a lot of the inherent sweetness of the grain.
